How to Prepare a Delicious Edikang
Ikong Soup for Xmas- Ladies in the House
Vegetable
soup in Nigeria aside from its nutritious contents, Vitamins and eye catchy
view seems one of the best dishes (soup) for a typical south eastern Nigerian.
Edikang
Ikong or perhaps Vegetable soup as it’s always called takes about 10 mins and
30 mins for both preparation and cooking respectively.
It is
particular to the natives of Akwa Ibom, Cross River and the Efiks but now
almost welcomed by ALL due to its
nutritional contents
The soup is prepared with enough quantity of
water leaves and the popular Pumpkin leaves (Ugwu) as making it so nourishing
and most times recommended by Doctors as a recipe especially for quick recovery
after a long ailment.
Ingredients
·
500g
water leaves
·
1kg
Pumpkin Leaves
·
2
medium bulbs Onions
·
2-3
stock cubes
·
Pepper,
·
Salt
·
Crayfish
·
200ml
palm oil
·
Periwinkle
·
Beef
(600g),
·
Kanda,
shake and dry fish
(The items listed above depends solely
on the taste of the individual as other vegetables such as Spinach, Grind
frozen spinach and Lambs lettuce could be used as alternatives rather than the
traditional pumpkin and water leave
Direction
- Wash and cut the leaves (Pumpkin leaves and Water leaves or its alternatives) into tiny pieces
- Drain out all the water in them as much as possible by putting them in separate sieves
- Cook the Beef, Dry fish and kanda (make sure you cut the Kanda into small pieces) with bulbs of diced Onions and 3 cubes of maggi (i.e. Knor cubes).
- Add as little water as possible
- When the meat is done, add a generous amount of palm Oil, pepper and crayfish and allow to boil for about 10 mins
- Remember
that the Palm Oil serves as water in the Edikan Ikong Soup and at such
should be at minimal
Edikang Ikong Soup - Add the periwinkle and water leaves and leave to cook for another 5 minutes but bear in mind that the water leaves should not be over cooked.
- Add the pumpkin Leaves and Salt to taste
- Do the final stirring of the Pot and turn off the heat. Cover the pot and leave the soup to stand for another 5 minutes
- Now the soup
is ready to be served with Semolina, Amala, Pounded yam and or Eba
- Its Christmas and not just Rice Christmas as usual
